Avocado Stuffed Tomatoes

 

Looking for a healthy snack for yourself or your kids?  Try this Avocado-Stuffed Tomato recipe from the Casa de Butera.  This is an easy recipe that takes 5-10 min to do.

 

 

Avocado Stuffed Tomatoes

Ingredients: (amounts used to your discretion)

small or medium sized tomatoes

avocado

grated parmesan cheese

fresh chopped basil

lemon juice (a few drops)

 

Directions for small tomatoes served cold:

Wash tomatoes.  Cut off the top and spoon out insides. Mix together avocado, parmesan cheese, fresh chopped basil, and a few drops of lemon juice.  Spoon in avocado mixture and serve immediately.

 

Directions for medium tomatoes served warm:

Wash tomatoes. Cut in half then place cut side up on a baking sheet.  Bake for about 5 minutes to soften. Mix together avocado, parmesan cheese, fresh chopped basil, and a few drops of lemon juice.  Spoon in avocado mixture on top and serve immediately.

 

*sprinkle cilantro on top for even more flavor
